Owners Tracy Rackauskas & Ben Dinsmore opened Migration Taco in Denver in 2019. The community enthusiastically welcomed the area’s first vegan taco truck, which served up delicious and innovative fare at breweries, farmers markets, colleges, hospital campuses, beer gardens, and public and private events in Denver, Boulder, and the surrounding area. After the truck’s busiest week ever, the pandemic brought things to a halt and Migration Taco switched to a delivery-only model before relocating to the remote Portal, Arizona/Rodeo, New Mexico area and operating during peak birding seasons. In 2023, the truck migrated northeast and posted up at the farmers market in Williamstown, MA. While in Massachusetts, Tracy & Ben also established, owned, and operated the vegan restaurant Wish Tree.
