Owners Tracy Rackauskas & Ben Dinsmore opened Migration Taco in Denver in 2019. The community enthusiastically welcomed the area’s first vegan taco truck, which served up delicious and innovative fare at breweries, farmers markets, colleges, hospital campuses, beer gardens, and public and private events in Denver, Boulder, and the surrounding area. After the trucks’s busiest week ever, the pandemic brought things to a halt and Migration Taco switched to a delivery-only model before relocating to the remote Portal, Arizona/Rodeo, New Mexico area and operating during peak birding seasons. In 2023, the truck migrated northeast and now has a home base in beautiful and vibrant North Adams, Massachusetts, which is on unceded land of the Muhheaconneok or Mohican people and the Wabanaki peoples.
